Flavour spotlight: Minamiuonuma, Niigata Prefecture

Minamiuonuma is a major Koshihikari rice-growing region in Japan, and is one of the many prefectures we source our rice from. Surrounded by hills and mountains, its basin-like geographical location allows for a substantial temperature range, and access to the rich mineral content of Mount Echigo-Komagatake’s natural spring waters. This results in the delicious, larger-than-average rice grains that we use for Kinmemai Premium™.

How Kinmemai Premium™
is made
1. Hand-selecting grains

Every grain used in Kinmemai Premium™ is hand-selected for its blending compatibility and superior vital energy. We use rice grains like Koshihikari and Pikamaru, prized as some of the world's best rice, and awarded Gold by the Association of the Certified Rice Appraisers at the 18th International Contest on Rice Taste Evaluation held in Kikuchi City, Kumamoto Prefecture.

2. Enhancing the grains

Purchased from their producers at a cost approximately eight times the usual price, the rice grains are then matured for half a year through a unique ageing process, developed 17 years ago to enhance texture, flavour and vital energy.

3. Patented rice polishing

The rice grains then go through the Kinmemai Process, refined and finished with our patented rice polishing technology. Kinmemai’s state-of-the-art rice buffing technique is both gentler and more precise than current conventional polishing techniques, removing only the indigestible wax layer around the husk of the grain and retaining all its beneficial elements as well as delicious, nutty flavour.
